Ingredients

1/2 lb ground beef
1/2 cup of chopped onion
1 15 oz can black beans
1 16 oz can mexican tomatoes
1/2 cup enchilada sauce
1 tsp chili powder
1 tsp cumin
6 6″ corn tortillas
3 oz cream cheese
4 oz can chopped green chilies

Why I Love This Recipe

Another recipe from my grandmother. I loved anything she cooked, but this is one of my favorites to make because it makes a great dinner for the family or side dish to bring to a gathering.

Ingredients

1/2 lb ground beef
1/2 cup of chopped onion
1 15 oz can black beans
1 16 oz can mexican tomatoes
1/2 cup enchilada sauce
1 tsp chili powder
1 tsp cumin
6 6″ corn tortillas
3 oz cream cheese
4 oz can chopped green chilies

Directions

1. Spread the cream cheese on the tortillas, then put green chilies on top of the cream cheese. Fold tortilla in half and set aside.

2. In skillet, brown together onion and ground beef until each is done. Add in the meat, beans, tomatoes, enchilada sauces, and seasonings.

3. Pour half of the meat mixture into a 12x7x2 inch glass baking dish. Arrange the folded tortillas down the center of the meat mixture over the tortillas. (May be covered and frozen at this point if you plan on serving at a later date.)

4. Cover and bake at 350 degrees F for 15 minutes.

5. Uncover and sprinkle with 1/2 cup grated monterey jack cheese. Bake 5 minutes more.
